Chinese Roast Chicken

A very easy recipe resulting in a tasty, succulent chicken

Equipment

  • Saucepan just big enough to hold chicken
  • Roasting pan

Ingredients

  • 1 Chicken Whole
  • 3 cups water
  • 1 cup soy sauce
  • ½ cup dry sherry Or dry white wine or vinegar
  • 3-4 slices fresh ginger
  • 3 spring onions Cut into 50mm lengths
  • 1 tsp sugar
  • 1 tsp salt

Instructions

  • Add everything except the chicken into the saucepan and bring to the boil
  • Add the chicken, boil for 15 minutes, turning halfway
  • Remove from heat and leave to rest in sauce for 15-20 minutes (or longer, not too critical)
  • Preheat oven to 230°C (450F) while chicken is resting
  • Put on roasting pan and in oven for about 30 minutes*, turning halfway
  • Carve Western style or chop Chinese style

Notes

*Time depends on size of chicken, check when it is good and brown on one side. Cook for same amount of time on other side.
4 cups master sauce can be used instead of liquid above. Jazz it up with garlic, ginger and star anise to your taste.
