Chinese Roast Chicken
A very easy recipe resulting in a tasty, succulent chicken

- 1 Chicken Whole
- 3 cups water
- 1 cup soy sauce
- ½ cup dry sherry Or dry white wine or vinegar
- 3-4 slices fresh ginger
- 3 spring onions Cut into 50mm lengths
- 1 tsp sugar
- 1 tsp salt
Add everything except the chicken into the saucepan and bring to the boil
Add the chicken, boil for 15 minutes, turning halfway
Remove from heat and leave to rest in sauce for 15-20 minutes (or longer, not too critical)
Preheat oven to 230°C (450F) while chicken is resting
Put on roasting pan and in oven for about 30 minutes*, turning halfway
Carve Western style or chop Chinese style
*Time depends on size of chicken, check when it is good and brown on one side. Cook for same amount of time on other side.
4 cups master sauce can be used instead of liquid above. Jazz it up with garlic, ginger and star anise to your taste.
