Chinese Roast Chicken
A very easy recipe resulting in a tasty, succulent chicken

Equipment
- Saucepan just big enough to hold chicken
- Roasting pan
Ingredients
- 1 Chicken Whole
- 3 cups water
- 1 cup soy sauce
- ½ cup dry sherry Or dry white wine or vinegar
- 3-4 slices fresh ginger
- 3 spring onions Cut into 50mm lengths
- 1 tsp sugar
- 1 tsp salt
Instructions
- Add everything except the chicken into the saucepan and bring to the boil
- Add the chicken, boil for 15 minutes, turning halfway
- Remove from heat and leave to rest in sauce for 15-20 minutes (or longer, not too critical)
- Preheat oven to 230°C (450F) while chicken is resting
- Put on roasting pan and in oven for about 30 minutes*, turning halfway
- Carve Western style or chop Chinese style
Notes
*Time depends on size of chicken, check when it is good and brown on one side. Cook for same amount of time on other side.
4 cups master sauce can be used instead of liquid above. Jazz it up with garlic, ginger and star anise to your taste.
